Charcuterie Board: Entertain in Style!

Want to impress your guests without the hassle of cooking or tons of prep work? Then a charcuterie (pronounced: shar-koo-tuh-ree) board is the answer! Charcuterie dates back hundreds of years when refrigeration was not around, and people preserved meats by curing them. Charcuterie has come a long way since then by not only using meats that are either salted, brined, or smoked, but also with the addition of cheeses, fruit, nuts, pickles, olives and condiments to balance out the palate and create a visually pleasing presentation. In this fun, hands-on class, get key pointers on how to create a delectable composition that includes a variety of tastes, textures, colors, and shapes. Create your own perfect charcuterie plate and make a gastrique (a sweet and sour condiment) to compliment your board. Chef Trusan has taught CFU’s popular Knife Skills class for years. His class motto is “play with your food and eat your homework”!
