Empanadas: From Argentina with Love
Who wouldn't love a pocket of warm pastry deliciously stuffed with spiced meats or fragrant herbs and tomatoes? Empanadas are a South American answer to the Italian calzone or English savory pie-small wonders to tuck in a lunch box or serve to guests. In class, learn how simply they can be made using either store-bought or home made dough and try a variety of fillings. Make empanadas Mendocinas (spiced beef and onion), corn and roasted red pepper, blue cheese and walnut, and chicken chorizo. Rebecca Caro is a food and travel writer, whose work has been featured in Cookie, DRAFT, 5280 and DiningOut magazines. She authors the blog From Argentina With Love, which was awarded 'Best New Blog of 2008' by Adam Roberts on his Food Network Show, the FN Dish. Rebecca is currently working on a cookbook based on her blog, and has appeared at the Museo de las Americas and on Radio 1430 AM. She also teaches at Whole Foods market and travels frequently to Argentina.
